Our first Manchester Talented Chef event of the year took us to Earle in Altrincham. Earle is Simon Rimmer’s second venture following on from the success of sister restaurant Greens in Didsbury, which has been a key part of the Northwest culinary map since 1990.
The Talented Young Chef for the evening was 21 year old Eddie Saunders. After gaining his NVQ at South Trafford College Eddie soon moved onto the esteemed kitchen of Northcote Manor where he worked under Nigel Howarth and Lisa Allen. Upon returning to Didsbury Eddie became junior Chef de Partie at Earle and has since progressed to become Junior Sous Chef. Taking on the role of host was 19 year old Jack Deane. Jack has been with Earle since he was 16 where he has progressed from a food runner to training for a future supervisory role. In addition to his role at Earle, Jack is also studying for a degree in International Business & Economics.
The menu began with a starter of Crispy chilli fried squid, spring onion & micro salad, and sweet chilli dressing, this was followed by a main of Pork fillet and belly, celeriac & roast onion puree, wilted spinach & sage jus. Rounding off the evening was a dessert of Apple crumble panna cotta and an espresso courtesy of illy.
